Ingredients:

  • 200g chow mein noodles (egg noodles)
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 1 cup cabbage, shredded
  • 100g bean sprouts
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Cook the chow mein noodles according to the package instructions. Drain and set aside.
  2. In a wok or large skillet, heat vegetable oil over medium-high heat.
  3. Add sliced onions and minced garlic. Stir-fry for 1-2 minutes until fragrant and the onions become translucent.
  4. Add julienned carrots, sliced bell peppers, and shredded cabbage to the wok. Stir-fry for another 3-4 minutes until the vegetables are slightly tender but still crisp.
  5. Add the cooked chow mein noodles to the vegetables in the wok.
  6. In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and sugar. Pour this sauce over the noodles and vegetables. Toss everything together to ensure even coating.
  7. Add bean sprouts to the wok and continue to stir-fry for an additional 2 minutes. Make sure not to overcook the bean sprouts; they should remain crisp.
  8. Season with salt and pepper to taste. Adjust the sauce if needed.
  9. Garnish with chopped green onions and serve the street-style chow mein hot.
